
I am obsessed with Bourbon glazed anything! Bourbon glazed chicken, shrimp, you name it, I love it! There is something about the warm sweet taste that makes my heart smile. So, it is only natural that when I had to choose an inauguraldish to break in my new cast iron skillet, I had to choose bourbon glazed salmon!

Ingredients and Equiptment

- Brown sugar (about 1/3 cup)
- Bourbon (about 1/4 cup)
- Dijon Mustard (1 tspn)
- Salt and pepper to taste
- Salmon Fillet (Skin removed)
- Butter (1/2 stick)
- Cast Iron Skillet
Making the Salmon
Step 1: Make the Sauce
On low to medium heat, melt 1/2 stick of butter in a cast iron skillet. Once the butter is completely melted, add 1/3 cup of brown sugar and 1 tspn of Dijon mustard. Once mixed in, turn the heat up to medium, and heat until bubbling.
Step 2: Brown the Salmon
Place seasoned salmon (I put salt and pepper on mine) in the skillet and cook on each side until it begins to brown. The time on each side varies depending on how big your filets are.
Step 3: Add the Bourbon
Once your salmon is browned, add 1/4 cup of bourbon and cook until reduced. If you feel like your salmon is beginning to overcook, you can take it out of the skillet while the sauce reduces. This means it thickens to a syrup and it starts to coat your spatula or spoon.
